The heart of the estate’s range, the Château Peyrassol range is available in all three colours. They are made from selected parcels of mainly old wines. Highly representative of the estate’s style in its commitment to excellence, they are characterised by their complexity and balance.
The 2025 vintage
The 2025 vintage was shaped by the rhythm of a demanding natural environment. A cool, wet winter gradually gave way to a spring marked by sustained, often stormy rainfall, falling unevenly depending on the layout and contours of each parcel. This was followed by a hot summer, punctuated by two heatwaves – the first in early July, the second at the end of August – which accelerated ripening across the vineyards. Along the coast, harvest began as early as mid-August, nearly two weeks ahead of the dates recorded some thirty years ago.
Further inland, the later-ripening terroirs of Provence, particularly on the limestone plateaus, followed a different tempo, with more varied harvest dates largely dictated by the soil’s water reserves. In the glass, the rosés and whites have retained a very fine freshness, essential to preserving the fruit and delicacy for which they are renowned, while the reds reveal power and concentration.
In the cellar, responsiveness and precise control of fermentation temperatures were the key challenges. Cellar masters and oenologists, working with fruit of outstanding quality, had to tame musts naturally rich in sugar and warmth in order to unlock the full potential of the grapes and preserve the balance of the wines. Sustained by this remarkable quality of fruit, 2025 stands out as a generous, well-balanced vintage, confidently oriented towards the future.
Soil
Clay and limestone dating from the Triassic period, with a high proportion of gravel.
Grape varieties
50 % Cinsault – 30 % Grenache – 10 % Syrah – 5 % Mourvèdre – 5 % Tibouren.
Growing
Organic farming. Cereals are sown between the rows to encourage soil life, the vineyards are carefully selected and the oldest plots are harvested by hand. Everything is done here to get the best out of our vineyard, which is set in the heart of a vast, unspoilt, wooded area.
Vinification
Delicate pneumatic pressing, careful separation of the juices and traditional vinification in temperature controlled stainless steel vats are all operations that precede our blends of the best batches obtained each year.
Ageing
As soon as fermentation is complete, a light racking is carried out to retain only the best of the lees, which are then carefully worked to enhance both their aromatic expression and their potential to last over time.
Tasting notes
Pale lychee-pink in colour, delicate and bright. The nose is fine and elegant, revealing lovely complexity with notes of white-fleshed fruit, citrus and white flowers. On the palate, the attack is straight, silky and delicate, carried by perfectly balanced volume. The finish is fresh and mouth-watering, enhanced by a subtle saline touch that pleasantly prolongs the tasting.
