Heart of the estate’s range, the Château Peyrassol range is available in all 3 colours. They are made from selected parcels of mainly old vines. Very representative of the estate’s style in its commitment to excellence, they are characterised by their complexity and balance.

Soil

Clay and limestone dating from the Triassic period, with a high proportion of gravel.

The 2021 vintage

To say that the 2021 vintage was a long and quiet river would be a sweet joke! However, Peyrassol went through the ordeal without suffering adversity.
At the end of April, a historic frost from the northwest (-9°) hit the region. The vines, late, have not really bud. The loss was minimal.
Not a drop of rain all summer long! Deeply rooted, the Peyrassol vineyard has rather well resisted.
In mid-August, a fire of rare violence broke out in the plain of Le Luc, sowing desolation in its path. The mistral was kind for Peyrassol and repels the fire in the direction opposite.
At the beginning of September, a hail storm destroyed the entire harvest of the village of Pignan, just a few miles from the estate. Our hills have blocked this cloud!
Finally, floods ravage all the surrounding municipalities… but stop at the gates of Flassans! And at the end, the ultimate reward with an exceptional quality of musts and wines.

Tasting notes

Very pale lychee pink colour. The nose is fine and elegant. Complex, it releases long-lasting white flesh and citrus fruits aromas, along white flower notes. The palate is straightforward and clean. Fine, silky, it is all at once soft, delicate and lively. The freshness of the finish supports a harmonious, measured volume thanks to a subtle hint of saltiness.

Grape varieties

50 % Cinsault – 25 % Grenache – 10 % Syrah – 8 % Mourvèdre – 4 % Tibouren – 3 % Vermentino et Ugni Blanc.

Vinification

Delicate pneumatic pressing, careful separation of the juices, traditional vinification in temperaturecontrolled stainless steel vats precede the blending of our carefully selected parcels..

Pairing

Its finesse, elegance and complexity will work wonders on a fish ceviche, a beautiful grilled sea bream or even white meat such as a veal stew with olives.

Growing

Agriculture under organic conversion. Cereal sowing in the inter-rows to encourage soil life, careful plot selection, manual harvesting of the oldest vines… everything is done here to obtain the best from our vineyard located in the heart of a vast preserved and wooded area.

Ageing

At the end of fermentation, a light racking in the clear is done allowing only the best of the lees to be kept, which are then carefully worked to develop the wine’s long-tasting aromatic potential.
